Whats for lunch?



Here is a great twist on your average bacon & egg toasty. Slightly more effort required but, I promise, it's worth it! This is too good to eat on your own so the quantities below make two. Here is what you need:

1 ciabatta loaf
6 rashers bacon
2 eggs - beaten
1 large handful baby spinach
cheddar cheese - thinly sliced
sea salt and ground black pepper
olive oil

Okay, pull out your panini press and switch the baby on. Cut the top and bottom off the ciabatta so that its about 3cm thick (keep those crusts for other uses like dipping in olive oil and balsamic). Next, slice open lengthways and then in half. Start the bacon and fry until crispy. Remove the bacon from the pan, discard most of the oil and throw in the eggs. Season to your liking with the salt and pepper and let the eggs set like an omelette. Now divide the spinach between the two sandwiches, top with the bacon, then the omelette and finish with the cheese. Brush both sides with a little olive oil and stick in the toaster for about 2-3 minutes until golden brown. All you need now is some freshly brewed coffee and you are sorted. Enjoy!
